Every year, a staggering 100,000 endangered Green Sea Turtles are killed for their meat. The reason? It’s deep-rooted in tradition. For generations, coastal communities have made turtle soup a staple dish, but at a devastating cost.

NotCo’s AI chef Giuseppe has the ability to replicate any meat's taste, texture and molecular structure, using only plant-based products.

We put Giuseppe to the ultimate test - recreating Green Sea Turtle meat, all in an effort to keep a species and a culture alive.

We created two documentaries  - a short form meant for social and a longer 25 minute documentary which aired on National Geographic in South America.
